Coconut Banana Bread

There is only one thing to do with bad bananas… and that’s make banana bread! I searched high and low trying to find a good recipe, which I also had the ingredients for, but I couldn’t find one I loved.

I finally decided to take a basic banana bread recipe and add extra ingredients I had around the house. To make it a little fancier, I added walnuts, coconut, and a layer of caramel sauce. The bread turned out great!

 

 

Coconut Banana Bread

Ingredients:

  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 egg, beaten
  • 3 mashed medium bananas
  • 1/2 cup chopped walnuts, plus a little more for sprinkling on top
  • 1/2 cup sweetened coconut, plus a little more for sprinkling on top
  • Caramel sauce

Directions:

  1. Preheat the oven to 350 degrees F. Lightly grease the loaf pan.
  2. In a large bowl, combine flour, cinnamon, baking soda, coconut, walnuts, and salt.
  3. In a separate bowl, use an electric mixer to cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.
  4. Stir the banana mixture to into flour mixture. Stir to moisten, do not over-mix.
  5. Pour half of the batter into the loaf pan.
  6. Next pour a layer of caramel over the banana bread batter.
  7. Cover the caramel with the remaining banana bread batter.
  8. Sprinkle the top with more coconut and walnuts.
  9. Bake in preheated oven for 60 to 65 minutes or until toothpick comes out clean. Let bread cool in pan for 10 minutes and then turn out onto a wire rack.
