Almond Date Energy Balls

This may be the only healthy dessert I’ve ever posted on my blog, but I assure you it tastes just as great as everything else! My biggest reason for making these energy balls was for my friend Megan. We are both really interested in health foods and have been wanting to try making energy balls like this for a while.

These energy balls are made from almonds, dates, dried cherries, coconut, hemp seeds, maple syrup, chocolate chips, and pistachios. Both sweet and filling, these make for a great dessert!

 

 

 

Almond Date Energy Balls

Ingredients:

  • 2 cups sliced almonds
  • 16 pitted dates
  • 1/2 cup dried cherries
  • 4 tbsp unsweetened coconut flakes, plus more for rolling
  • 2 tbsp hemp seeds
  • 4 tsp maple syrup
  • 1/2 cup mini chocolate chips
  • 4 tbsp pistachios
  • 2 tbsp water

Directions:

  1. Add all ingredients except chocolate chips, pistachios, and water to food processor.
  2. Pulse until the dates have been broken own and the mixture is coarsely chopped. Scrape the sides if necessary.
  3. Add chocolate chips, pistachios, and water and pulse about 5 more times until all the ingredients are incorporated.
  4. Shape into balls using a tablespoon scooper and then roll in coconut flakes.
  5. These freeze great!
