Peanut Butter Pizzelle Ice Cream Sandwiches

A few weeks ago, my aunt texted me to tell me about all the amazing desserts she and her family had ordered while out to dinner. One of them was a pizzelle ice cream sandwich. She mentioned that she had a pizzelle mold for her waffle maker, which reminded me that I have one too!

I’m making a big dessert next week for my grandmother’s 95th birthday, so this week I wanted to make something that was really easy — I know my sister made fun of me last week for calling the Mini Lemon Meringue Pies easy, but these are actually extremely easy to make!

These are vanilla ice cream scoops sandwiched between two peanut butter covered pizzelle cookies. I’m not sure how many of you guys have tried peanut butter on top of vanilla ice cream, but it is amazing on its own, and even better as a pizzelle sandwich!

Peanut Butter Pizzelle Ice Cream Sandwiches (makes 15 sandwiches)


  • 3 Eggs 
  • 3/4 cup sugar
  • 1/2 cup butter or margarine, melted (1 stick)
  • 1 tsp vanilla
  • 1 3/4 cups all purpose flour
  • 2 tsp baking powder
  • vanilla ice cream
  • creamy peanut butter


  1. Beat eggs and sugar in a large bowl. 
  2. Add cooled melted butter or margarine, and vanilla.
  3. Sift flour and baking powder together and then add to the egg mixture.
  4. Batter will be stiff enough to be dropped by a spoon.
  5. Spray Pizzelle maker before first pizzelle of the batch with cooking spray.
  6. Drop 1 heaping spoonful of batter on each grid pattern (dropping it slightly above the center works best).
  7. Close the pizzelle maker and allow to cook for 30-45 seconds depending on how brown you would like your pizzelles.
  8. Remove pizzelles from the grid with a spatula, and transfer to a flat surface to cool.
  9. Repeat steps 6-8 for the rest of the batter.
  10. Once pizzelles are cooled, if excess dough expanded beyond the pattern, use a kitchen scissor to trim off the excess.
  11. Next, take two pizzelle cookies and spread peanut butter on one side of each cookie.
  12. On one side, place four mini scoops of ice cream.
  13. Press 2nd cookie (peanut butter side down) on top of the ice cream, creating a sandwich.
  14. Enjoy!
